PESTLE AND MORTAR
3 stalks of lemongrass (white part only)
6 cloves of garlic
1 knob of ginger
2 Tbsp sugar
ADD RIGHT BEFORE FRYING
1 egg
2 Tbsp cornstarch
2 Tbsp of rice flour
1 tsp of baking soda
Frying oil: canola or vegetable
Mix all ingredients from marinade, set aside. Make paste with all pestle and mortar ingredients. Add paste to marinade mixture. Toss and rub the chicken wings with mixture in a ziplock bag and let marinate overnight or at least 5 hours.
When ready to fry heat the oil to 350. Crack egg and the flour mix into the marinated chicken until a somewhat watery thin batter is formed. Fry immediately until golden brown, 15 mins.
